Create some of your own authentic Caribbean cuisine in your own kitchen! Wilma Browne Yarde shares her secret recipe for baked and grilled chicken with tons of BBG flavor, texture and heat. This is a garlic-rich green seasoning with herbs, habañero pepper, ginger and citrus prepares chicken for baking. Next, the chicken is dipped in a spicy tomato and brown sugar BBQ sauce with sriracha, beer and more habañero.
INGREDIENTS:
Serves 8
* 3½ lbs chicken, bone & skin-on, cut into pieces
* 2 tbsp green seasoning*
* paprika
* 1 cup BBQ sauce*
Green Seasoning (makes about 1½ cups)*
* 1 bunch scallions
* 1 bunch thyme
* 1 bunch cilantro
* 11 cloves garlic
* 1 habañero pepper
* 1 tbsp peeled fresh ginger
* 1 lime or lemon, skin-on, diced
* 1 cup water
Caribbean BBQ Sauce
* 1½ cups ketchup
* ½ cup sriracha chili sauce
* ½ cup tomato paste
* ¼ cup red onion, grated
* 1 tsp brown sugar
* 1 tsp yellow mustard
* 1 tsp salt
* ? cup beer
* ½ tsp habañero pepper, chopped
* 1½ cups water
Special Equipment
* large baking dish
* grill
* tongs
HOW-TO:
Make Green Seasoning
1. Combine all ingredients in blender. Blend until a smooth thick paste
Make BBQ Sauce
1. Whisk all ingredients together in a large bowl and set aside
Add Green Seasoning & Bake Chicken
1. Preheat oven to 325º
2. Wash chicken and make a few scores in the skin and fat
3. Rub chicken thoroughly with the green seasoning. Place in baking dish and sprinkle with paprika and bake for 50 minutes
Add Sauce & Grill Chicken
1. Remove from oven and coat with BBQ sauce
2. Grill 1-2 minutes per side on medium-high heat. If you do not have access to a grill, place under oven broiler for 1 minute each side
