Ina Garten is going to provide you with an amazing recipe to roast a chicken. Begin BY THAWING the chicken under RUNNING cold water and then pat it down with a paper towel. Now make sure the inside of the chicken is empty and add a good amount of salt and pepper. Also, add in a QUARTERED whole lemon , a whole clove of garlic chopped in half, fresh thyme and just make sure its all stuffed inside pretty good. Now, you want to melt down enough butter to be able to brush the entire SKIN of the chicken with it and then add more salt and ground black pepper to cover the SKIN of the chicken. After that, take the chicken and THRUST it, none of the chicken will BE burn or over cook like the legs. Now, you want to cut up some vegetables like carrots, onions, fennel, thyme and place them around the chicken in the pan your going to cook the chicken on. Place it in a pre-heated oven of 425 degrees and cook for about AN hour and a half. Next, check the chicken to ensure it's cooked all the way by cutting between the leg and thigh and if the juices run clear then it's all done. Cover the chicken with foil and let it sit for about 20 minutes and put the vegetables back in the oven to caramelize if you want. AND FINALLY, just SET-UP your chicken up and plate it with all the vegetables and juices from the pan.
